Buffalo Chicken Croquette |
|
All the flavor of buffalo chicken wings without all the mess! This simple, yet very elegant appetizer is easy to make and will really pack a punch with flavor. This is an example of how I get an idea and then start mixing up ingredients: Italian Chicken, Proscuitto and Basil Croquette and Chicken, Jalapeño and Cheddar Croquette. |

| Ingredients: |
1 large chicken breast, boneless and skinless
2 tbl. minced onion
2 tbl. celery, finely chopped
1 tsp. minced garlic
1 egg
buffalo wing sauce
¼ cup bread crumbs
oil
salt & pepper
very good blue cheese dressing |

celery sticks
carrot sticks |

Instructions: |

|
Dice the chicken into very small pieces. Season with salt and pepper. Set aside. Begin to heat oil.
Saute onion, celery and garlic over medium heat in 1 tbl. oil. When onion becomes soft, add seasoned diced chicken. Cook until chicken is no longer pink. Drain the chicken.
In a small bowl, beat the egg. Put 1 tbl. of the beaten egg into another bowl and add 1 tbl. buffalo wing sauce. Set aside for a moment. To the larger portion of beaten egg, add 1-2 tbl. buffalo wing sauce. Set aside. The shaped croquettes will be dipped into the larger portion of egg/buffalo sauce mixture.
Add the cooked chicken to the smaller portion of the egg mixture. Toss the chicken to coat. Add approximately 2 tbl. breadcrumbs and combine. The egg and breadcrumbs will allow the chicken mixture to be formed into small logs (croquettes). Add enough breadcrumbs to get a thick paste-like consistency.
Form the chicken mixture into 1 ½-2 inch logs. Dip and coat each with the set aside egg/buffalo sauce mixture. Then coat with breadcrumbs.
Fry the croquettes in the hot oil. Drain the excess oil after removing from the deep fryer. For more great buffalo wing flavor, pour a little buffalo wing sauce over the cooked croquettes.
Serve these delicious croquettes with carrot sticks, celery sticks and a very good blue cheese dressing (such as T. Marzetti Chunky Blue Cheese) for dipping. |
