Shrimp Ceviche |
|
The shrimp is "cooked" by the acid in the fresh lime juice! Add a few light and spicy chopped vegetables and seasonings to complete. Enjoy this delightful treat anytime. To add more heat, add a few drop of your favorite hot sauce. |

| Ingredients: |
| To 'cook' the shrimp: |
½ lb shrimp, remove shell and vein, chop
¾ fresh lime juice to cover shrimp (about 4-5 limes) |
| For the ceviche: |
1 cup fresh tomato, diced
1 jalapeno, remove veins and seeds, finely chop
½ cup finely chopped onion
¼ cup red pepper, chopped
1-2 cloves garlic, finely chopped
pinch of salt
1 tsp. white wine vinegar
2 tsp. olive oil
½ tsp. cumin
1 tsp. garlic & pepper seasoning
½ cup chopped fresh cilantro |
| For garnish: |
diced avocado
tortilla chips or crackers |

Instructions: |

Chop shrimp. Place shrimp in a glass bowl and cover with lime juice. Cover and refrigerate for 2 hours.
Combine remaining ingredients. Add "cooked" shrimp. Garnish top with diced avocado and serve with lime wedges on the side. |
