Spicy!Shrimp Ceviche Printable Recipe
The shrimp is "cooked" by the acid in the fresh lime juice! Add a few light and spicy chopped vegetables and seasonings to complete. Enjoy this delightful treat anytime. To add more heat, add a few drop of your favorite hot sauce.
Ingredients:
To 'cook' the shrimp:
  ½ lb shrimp, remove shell and vein, chop
  ¾ fresh lime juice to cover shrimp (about 4-5 limes)
For the ceviche:
  1 cup fresh tomato, diced
  1 jalapeno, remove veins and seeds, finely chop
  ½ cup finely chopped onion
  ¼ cup red pepper, chopped
  1-2 cloves garlic, finely chopped
  pinch of salt
  1 tsp. white wine vinegar
  2 tsp. olive oil
  ½ tsp. cumin
  1 tsp. garlic & pepper seasoning
  ½ cup chopped fresh cilantro
For garnish:
  diced avocado
  tortilla chips or crackers

Instructions:
Chop shrimp. Place shrimp in a glass bowl and cover with lime juice. Cover and refrigerate for 2 hours.

Combine remaining ingredients. Add "cooked" shrimp. Garnish top with diced avocado and serve with lime wedges on the side.

Serves: 4
