Spicy!Guacamole Printable Recipe
Guacamole goes with many different foods. Here I have created a condiment tray for cheese quesadillas. Simple put a flour tortilla in a lightly greased frying pan. Sprinkle a tortilla with a fresh Mexican or taco-flavored cheese, press a second tortilla over the cheese. When first tortilla is lightly toasted, carefully turn quesadilla to lightly toast second tortilla. Remove from pan and cut into wedges.

Other condiments include black bean, corn and cilantro salsa, refried beans from a can (heated and mixed with salsa verde to taste), lettuce, sour cream mixed with fresh lime juice (to taste), and black olives.
Ingredients:
  2 plum tomatoes, seeded and diced
  2 cloves garlic, minced
  1 tbl fresh cilantro, chopped
  1 tbl red pepper, finely chopped
  1 tbl orange pepper, finely chopped
  1 tbl yellow pepper, finely chopped
  1 jalapeno pepper, finely chopped
  1 tbl yellow onion, finely chopped
  1 tbl red onion, finely chopped
  freshly cracked black pepper, to taste
  dash of coarse salt
  juice of one fresh lime
  2 fresh avocados
quesadilla condiment tray

Instructions:
Combine all ingredients except the avocado. Allow to sit for 1 hour.

The easiest way to open an avocado is to slice along the length of the avocado. Pull apart into two halves. Firmly, yet gently stab a sharp knife into the pit. Twist to remove pit. Skore the avocado flesh in each half by slicing horizontally and then vertically. Invert the avocado shell and use a spoon to scrap the flesh into a bowl.

Mash the avocado. Add other ingredients. Combine.

Serves: 6-8
