Chicken, Jalapeño and Cheddar Croquette |

A spicy snack loaded with chicken, jalapeño peppers, and sharp cheddar cheese that is fried to a golden brown and served with an avocado ranch dipping sauce. This is an example of how I get an idea and then start mixing up ingredients: Buffalo Chicken Croquette and Italian Chicken, Proscuitto and Basil Croquette. |

| Ingredients: |
1 large chicken breast, boneless and skinless
1 tbl. minced onion
2 tbl. pickeled jalapeñ peppers, finely chopped
1 egg
¼ cup shredded sharp cheddar cheese
¼ cup bread crumbs
oil
salt & pepper
avocado ranch sauce (recipe follows) |

Instructions: |

Dice the chicken into very small pieces. Season with salt and pepper. Set aside. Begin to heat oil.
Saute onion and jalapeño peppers over medium heat in 1 tbl. oil. When onion becomes soft, add seasoned diced chicken. Cook until chicken is no longer pink. Drain the chicken.
In a small bowl, beat the egg. Put 1 tbl. of the beaten egg into another bowl. The shaped croquettes will be dipped into the larger portion of egg.
To the smaller portion of the egg, add the cheddar cheese. Sitr to coat. Add the cooked chicken. Toss to coat. Add approximately 1-2 tbl. breadcrumbs and combine. The egg and breadcrumbs will allow the chicken mixture to be formed into small logs (croquettes). Add enough breadcrumbs to get a thick paste-like consistency.
Form the chicken mixture into 1 ½-2 inch logs. Dip and coat each with the set aside egg. Then coat with breadcrumbs.
Fry the croquettes in the hot oil. Drain the excess oil after removing from the deep fryer.
Serve these delicious croquettes with an avocado ranch sauce for dipping. To make avocado ranch sauce, mix equals parts of your favorite ranch dressing and diced avocado. |
