Italian Chicken, Proscuitto and Basil Croquette
This tasty recipe is loaded with Italian-seasoned chicken, proscuitto, basil and parmesan. Serve these with your favorite marinara sauce for dipping. This is an example of how I get an idea and then start mixing up ingredients: Buffalo Chicken Croquette and Chicken, Jalapeño and Cheddar Croquette.
Ingredients:
  1 large chicken breast, boneless and skinless
  1 tsp. Italian seasoning
  3 tbl. minced red onion
  1 tsp. minced garlic
  2 tbl. red pepper, finely chopped
  1 egg
  1 tbl. basil, finely chopped
  ¼ cup proscuitto, finely chopped
  ¼ cup grated parmesan cheese
  ¼ cup bread crumbs
  oil
  salt & pepper
  very good marinara sauce
Italian Chicken, Proscuitto and Basil Croquette

Instructions:
Dice the chicken into very small pieces. Season with Italian seasoning, salt and pepper. Set aside. Begin to heat oil.

Saute red onion, garlic, and red pepper over medium heat in 1 tbl. oil. When onion becomes soft, add seasoned diced chicken. Cook until chicken is no longer pink. Drain the chicken.

In a small bowl, beat the egg. Put 1 tbl. of the beaten egg into another bowl. The shaped croquettes will be dipped into the larger portion of egg.

To the smaller portion of the egg, add the proscuitto, basil and parmesan. Sitr to coat. Add the cooked chicken. Toss to coat. Add approximately 1-2 tbl. breadcrumbs and combine. The egg and breadcrumbs will allow the chicken mixture to be formed into small logs (croquettes). Add enough breadcrumbs to get a thick paste-like consistency.

Form the chicken mixture into 1 ½-2 inch logs. Dip and coat each with the set aside egg. Then coat with breadcrumbs.

Fry the croquettes in the hot oil. Drain the excess oil after removing from the deep fryer.

Serve these delicious croquettes with your favorite marinara sauce for dipping.

Makes approximately 6-8 croquettes.
