Reuben Dip |
|
If you are a Reuben lover and need a quick fix -- THIS is the snack for you! I do not like 1000 Island dressing so I use dijon mustard, but switch the ingredient if you prefer. |

| Ingredients: |
2 - 8 oz pkgs. Philly cream cheese, softened
at least 8 oz. corned beef, finely diced
1-2 tbl milk (depends on consistency desired)
½ cup shredded Swiss cheese
at least ½ cup sauerkraut, chopped (yes, I know it is already shredded)
2-3 tbl sauerkraut juice
1 tsp coarse black pepper
2 tbl good Dijon mustard
1½ cup mayo |

Instructions: |

In the bowl of a mixer, blend all the ingredients. Put into a dip-serving dish. Refrigerate for at least 30 minutes before serving to allow the flavors to blend together.
Serve on a rye bagel, or with some rye crackers. Absolutely fabulous!! |
