Buffalo Shrimp Pasta |
|
Shrimp are cooked in spicy buffalo sauce and then added to blue cheese covered pasta. Chunks of carrot and celery are added for a crunch. This is really great hot or cold. Bite-sized shrimp (21-25 count) work best in this dish. |

| Ingredients: |
1 box pasta (favorite shape), cooked according to package directions
1 cup blue cheese dressing
1 lb. shrimp, shelled and deveined
1 cup buffalo wing sauce
2 tbl olive oil
2 tsp garlic, minced
½ cup carrot, diced
½ cup celery, diced
½ cup onion, diced
½ blue cheese crumbles, to taste |

Instructions: |

Cook pasta according to package directions. Drain, rinse and allow to cool. Meanwhile, add olive and garlic to saute pan over medium heat. Add shrimp and buffalo sauce. Add onion, celery and carrot. Cook 5-7 minutes, until shrimp are done and sauce has reduced slightly.
Return pasta to cooking pan over medium heat, add blue cheese dressing to pasta. Toss to coat.
Spoon pasta into serving dish and spoon shrimp with sauce over pasta. Sprinkle with blue cheese crumbles. |
