After Joe and I returned from Italy in October 2006, I was inspired to create a cookbook based on some of our favorite Italian foods. My cookbook contains some interesting information about Italian food and recipes for: Insalata Caprese, Spaghetti Carbonara, Parmesan Pesto Linguine, Spinach and Ricotta Ravioli, Rosemary and Lemon Roasted Chicken, Lasagna, Pizza with Cream and Proscuitto, Gorgonzola Gnocchi, Italian Sandwiches, Tiramisu, Luscious Lemon Cake, and more. |

I love creating new recipes when I can find free time. Whether it is an idea for a flavor combination, trying to recreate a meal from a restaurant, or tweaking existing recipes I am always looking for a way to improve any meal I cook. Of course, this method creates many failed attempts. Here are some of my recent successes. |

Mediterranean Chicken Salad Sandwich |

This sandwich is loaded with flavors of basil, lemon, capers, sun-dried tomatoes, kalamata olives, and feta cheese. It's a great way to use left-over grilled chicken. |

Roasted Sweet Potato Salad |
|
|
 |
This recipe combines sweet potatoes with cranberries, raisins, apples, and more in a creamy sweet dressing. Candied hazelnuts add an interesting crunch and mini marshmallows add an unexpected surprise. |

Chocolate Banana Cream Cake |

 |
What happens if you combine banana bread with banana cream pie and toss a little chocolate sauce over the whole thing? It's my Chocolate Banana Cream Cake and it is fantastic! |

Voodoo Chicken  |

Joe and I cannot get enough of this great flavor combination. Spicy chicken stuffed with Pepperjack cheese and chorizo. Served with a creole mustard sauce on a bed of dirty rice. |

Chicken Scallopine |
|
|
 |
A creamy sauce of chicken, artichokes, capers, mushrooms and bacon over pasta. Chicken Scallopine is slightly elegant, but not difficult to make. |

Raspberry Chipotle Tacos  |

 |
Sweet and spicy pork tacos topped with a wonderful black bean, corn and cilantro salsa. This was inspired by some wonderful tacos Joe and I had while in Calistoga, California last fall. |

Carmelized Onion, Chicken and Proscuitto Pizza |

The flavor combination over a lemon pepper cream sauce makes this one of my favorite meals of all-time! |
