Chicken, Proscuitto, Carmelized Onion Pizza with Lemon Pepper Cream Sauce |

This pizza was inspired by a pizza Joe and I used to eat at Bertucci's. Unfortunately, all the Bertucci Restaurants near us have closed. Although I have not been able to figure out the recipe for the crust that Bertucci's uses, this pizza has a great tasting lemon-pepper cream sauce with carmelized onions, chicken and proscuitto as the toppings. This pizza is amazing! |

| Ingredients: |
1 pizza crust, a very thin crust
1 cup chicken, cooked and diced
4 slices proscuitto, chopped |
| For the carmelized onions: |
3 large onions, thinly sliced
4 tsp. butter

| For the lemon-pepper cream sauce: |
2 tbl. butter
2 tbl. flour
1 cup chicken broth
3/4 cup milk
2 tbl lemon-pepper seasoning

Instructions: |

Lightly season cooked chicken with lemon-pepper seasoning.
In a saucepan over medium heat, melt butter. Stir in flour and cook about 3 minutes. Meanwhile heat chicken broth and add milk. Stir chicken broth/milk mixture into butter/flour mixture. Continue to cook until comes to a boil, stirring frequently. Continue to cook for about 5 more minutes. Sauce will thicken as it cools.
In a large pan, melt butter for carmelized onions. Add onions and cook over low heat for 20-25 minutes, or until onions turn brown (but not burnt).
Cook pizza crust for about 5 minutes at 350°
To assemble pizza, spread lemon-pepper cream sauce over pizza crust. Spread carmelized onions over sauce. Sprinkle chicken and proscuitto over onions.
Bake at 350° for 7-10 minutes. Remove from oven. Enjoy!
