Deep Dish Cornbread Crusted 'Za
This deep dish pizza can be stuffed with your favorite ingredients but make sure you use the cornbread crust for a twist on traditional pizza. My favorite stuffings are pepperoni and cheese!
Ingredients:
For the crust:
  1 pkg. quick rise yeast
  1 cup warm water (110°-120°)
  1 tsp. sugar
  ½ tsp. coarse salt
  2 tbl. olive oil
  2½ cups + ¼ cup flour
  1 cup cornmeal
For the pizza:
  7 slices provolone
  1 cup favorite pizza sauce
  pepperoni
  1½ cup mozzarella cheese, shredded
  ground sausage, cooked
  ½ cup parmesan cheese, shredded

Instructions:
Dissolve yeast and sugar in warm water. Allow to sit about 5 minutes. Add salt, olive oil and 2½ cups flour. Using the dough hook of an electric mixer, slowly blend for about 2 minutes. Add cornmeal, ½ cup at a time, and continue to blend. Add remaining flour (¼ cup). Mix slowly until dough clings to hook and cleans sides of mixing bowl. Continue mixing, to knead, about 2 more minutes.

Place dough in greased bowl and cover with a wet towel and plastic wrap. Place in a warm place and let rise until dough has doubled, about 1 hour.

Lightly grease a 9-inch springpan and sprinkle with cornmeal. Remove about ¼ cup of the dough and set aside. Press remaining dough into bottom and sides of pan.

Place 7 slices of provolone cheese as first layer of pizza. Use one cup of sauce to cover cheese layer. Place pepperoni in an even layer over sauce. Sprinkle ½ cup shredded mozzarella cheese over pepperoni. Add sausage. Sprinkle ½ cup shredded mozzarella cheese over sausage.

Press remaining dough into a circle that will cover the pizza. (I use the same bowl used when the dough was rising.) Place this dough over the pizza and seal the edges.

Bake at 450° for 20 minutes. Remove from oven and add 1 cup pizza sauce to top of pizza. Sprinkle with ½ cup shredded mozzarella cheese and ½ cup shredded parmesan cheese. Continue to bake for 3 more minutes.

Allow to cool slightly (about 7-10 minutes). Remove sides of pan and slide pizza onto cutting surface. Cut pizza into slices and serve. Enjoy!
