Personal Pizzas
This is a wonderful idea for people that want their own kind of pizza without any fuss. You choose the toppings. Below are some of my favorites. Make sure you always start with this crust and then experiment from there! The crust is made from frozen dinner roll dough!
Ingredients:
  frozen dinner roll dough
  sauce
  toppings
  cheese

Instructions:
Thaw dough according to package instructions. On a floured surface, roll dough out to a 6-8 inch circle. The diameter depends on how thin you like your pizza crust. For some pizzas, the dough can be enhanced at roll time by adding special ingredients to the flour. For a barbecue chicken pizza, I use a flour and cornmeal blend when rolling the dough. For cheeseburger pizzas, I add some onion powder to the flour when rolling the dough. Be creative to add another level of flavor to your pizza!

The pizza crusts can be cook in two methods. In the summer, it is fun to grill the pizza dough outdoors. Simply place the rolled dough on a heated grill. After about 5 minutes, turn the dough to the other side. Add your sauce, toppings, and cheese. Grill a few minutes more. The crust may bubble. This is fine.

Alternatively, you can cook the dough in an oven set at 400º for about 7-10 minutes. The dough should be almost finished when you remove it from the oven to add your toppings. Return the crust with toppings to oven and bake for another 2-5 minutes.

Some of my favorite pizzas:
Barbecue Chicken Pizza
Add cornmeal to the flour when rolling the dough. For the sauce, combine equal amounts of tomato pizza sauce and BBQ sauce. Spread evenly over dough. Add cooked, leftover chicken pieces, chopped red onion, and shredded smoked gouda cheese or smoked provolone cheese.

Bacon Cheeseburger Pizza
Add onion powder to the flour when rolling the dough. Use a small amount of processed cheese spread as the sauce of this pizza. Add browned ground beef, crumbled bacon, chopped onion, and chopped pickle. Top with shredded sharp cheddar cheese. Prepare a mayo mixture to spread over top of pizza after baking by combining a tablespoon of mayo with a tablespoon of milk. This could easily become your other favorite types of hamburgers with some creativity -- grilled onion and mushrooms, BBQ Bacon Cheddar Burger, etc.

Joey's Carbonara Pizza
Use a ready-made garlicy Alfredo sauce for the sauce. Add crumbled bacon, diced red and green peppers, and chopped red onion. Sprinkle with shredded Monterey Jack cheese.

Simple Pizza
Add Italian seasoning to the flour when rolling the dough. For the sauce, spread a good oil olive over the crust. Arrange thinly slice plum tomatoes and fresh basil over crust. Sprinkle with crumbled feta cheese.

Taco Pizza
Any type of food can be made into a pizza! This is just another delicious example of that. Of course, leave out whatever ingredients you do not like and add what I have forgotten. Photo to be posted soon
Ingredients:
  one pizza crust, you may buy a mix or make your own
  1 tbl corn meal
  1 can refried or black beans
  1 cup tomato salsa
  ½ pound ground beef
  1 large yellow onion, chopped
  dash of hot sauce
  1 cup shredded cheddar cheese
  1 cup shredded (pepper) jack cheese
  1 cup sour cream blended with 2 tbl milk
  ½ head of lettuce chopped
  1 tomato, diced
  taco flavored tortilla chips, broken into pieces

Instructions:
Prepare the pizza crust and put onto the pizza sheet, or pizza stone. Lightly sprinkle the crust with corn meal. Bake the empty crust at 325º for about 5 minutes.

Meanwhile, combine the beans and salsa in a saucepan and heat. This is the sauce for the pizza. Spread this evenly on the crust.

Cook the ground beef over medium heat. Season with garlic salt, black pepper, and a couple dashes of hot sauce. Add half of the chopped onion to the ground beef and cook until translucent. Drain the grease from the ground beef and sprinkle the meat over the sauce on the pizza crust.

Using a ½ cup of each cheese, sprinkle the cheeses over the meat. Bake this at 325º for about 5 minutes, or until the cheese begins to melt.

Spread the sour cream mixture across the top of the pizza. Add the chopped lettuce, remaining onion, tomato, tortilla chips, and remaining cheeses. Return this to the oven for 2-3 minutes.

Cut the pizza into slices and serve. Be careful to not disturb the toppings. Enjoy!
