Asian Coleslaw |
|
Crisp green and purple cabbage is combined with carrots, bean sprouts, red pepper and/or orange pepper and/or yellow pepper, cilantro and green onion in this coleslaw that is topped with a honey, ginger and garlic sauce. Crunchy peanuts are added to the top to create a wonderful alternative to traditional coleslaw. Enjoy!
If you ever watch Barefoot Contessa, with Ina Gartner, you'll recognize this dressing! She used a similar sauce to marinate chicken before baking. It works great here too! |

| Ingredients: |
| For the dressing: |
1 cup honey
¾ cup soy sauce
¼ cup garlic, minced
½ cup fresh ginger, minced |
| For the salad: |
1 cup green cabbage, shredded
1 cup purple cabbage, shredded
¼ cup fresh cilantro, coarsely chopped
1 cup carrot, julienned
¼ cup red pepper, julienned
¼ cup orange pepper, julienned
¼ cup yellow pepper, julienned
3 green onions, thinly sliced
1 cup bean sprouts
½ cup peanuts, chopped |

Instructions: |

Combine all the ingredients for the dressing in a sauce pan. Heat over medium heat until honey is dissolved. Allow to cool.
Combine salad ingredients in a large bowl. Pour dressing over salad and toss to coat. Enjoy! |
