Chilled Italian Pasta Salad
This salad combines some of the great flavors that I associate with Italian foods. This delicious salad is loaded wtih cheese tortellini, salami chunks, artichokes, pepperoncinis, sweet cherry tomatoes, fresh mozzarella, black olives, chunks of red pepper and fresh basil in a tangy Italian-style dressing.
Ingredients:
For the dressing:
  1 tsp. yellow onion, chopped
  2 tsp. garlic
  1 tbl. Dijon mustard
  2 tbl. white Balsamic vinegar
  4 tbl. olive oil
  1 tsp. Italian seasoning
  1 tsp. garlic-pepper seasoning
  ½ tsp. salt (or to taste)
For the salad:
  1 lb. cheese tortellini, cooked according to package directions
  1 cup Italian salami, diced
  ¾ cup pepperoncini peppers
  1 cup grape or cherry tomatoes, cut in half
  8 oz. fresh mozzarella, cut to bite-sized pieces
  ½ cup red pepper, chopped
  ¼ cup black olives, chopped
  1 cup canned artichokes hearts, chopped
  4-6 fresh basil leaves, chopped coarsely
Chilled Italian Pasta Salad

Instructions:
Combine all the ingredients for the dressing, except olive oil, in a food processor. Pulse to finely chop ingredients. Gradually add olive oil to processor to create dressing.

Combine remaining ingredients in a large bowl. Pour dressing over salad and toss to coat. Refrigerate salad for at least 2 hours before serving.
