Spicy Roasted Potato Salad |
|
The cool sour cream based dressing helps to offset the spicy roasted potatoes used to create this fantastic creamy potato salad with a kick! This is a great twist on the traditional potato salad. |

| Ingredients: |
| For the dressing: |
1 cup sour cream
½ cup mayo
½ cup milk
juice of 1 lime
dash of salt |
| For the roasted potatoes: |
3 lbs. red potatoes, cubed
1 tsp. cayenne pepper
2 tsp. cumin
1 tbl. paprika
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. salt
2 tsp. garlic-pepper seasoning
1 tsp. chili powder
½ tsp. Italian seasoning
3 tbl. olive oil |
| Other salad ingredients: |
1 can black beans, drained and rinsed
½ cup red pepper, chopped
½ cup red onion, chopped
½ cup green onion, chopped
2-4 jalapeños, chopped
½ cup fresh cilantro, chopped
2 hard-boiled eggs, chopped (optional) |

Instructions: |

Preheat oven and roasting pan to 500 °. Toss potatoes with seasonings and olive oil. Place potatoes on heated roasting pan in a single layer (may need two pans depending on the size of the pans). Bake for about 15 minutes and then turn potatoes. Bake another 10-15 minutes, until potatoes are soft, yet crisp on the outside. Allow to cool slightly.
Combine all the ingredients for the dressing.
Toss all salad ingredients together with potatoes. Add dressing and combine to mix. |
