Zesty Potato Salad
Ranch dressing and dijon mustard kick this regular ol' potato salad up a notch! Add this creamy treat to any summer BBQ.
Ingredients:
  3 hard-cooked eggs
  5-6 cups red potatoes, diced
  1 chopped yellow onion
  2 tbl dijon mustard
  1 cup mayo
  ½ cup milk
  2 tbl powdered Ranch dressing mix
  ¼ tsp fresh cracked pepper
  ¼ tsp celery seed
Zesty Potato Salad

Instructions:
Leave the skins on the potatoes. Cook in water (add 1 tsp salt) until potatoes are soft. Drain and chill. Meanwhile, make the sauce for the potato salad. Remove shell from eggs. Separate the yolk for the white part of each egg. Chop the white of each egg and put in a big bowl. In a small bowl, mash egg yolks. Add mayo, dijon mustard, milk, Ranch mix, black pepper, and celery seed. Blend thoroughly.

Add onions and potatoes to large bowl. Pour sauce into large bowl. Toss gently to coat. Chill for at least 2 hours before serving.

ALTERNATIVES: You could use about a ½ cup Ranch dressing in place of the powdered Ranch mix. Make use to reduce the amount of milk to about ½ cup. It is also very important to use a very good dijon mustard for maximum flavor -- I recommend Grey Poupon. In place of the celery seed, you could chopped fresh celery.
