Spicy!Buffalo Chicken Salad Wrap
There are certain flavors that I just love and Buffalo Sauce with Blue Cheese are two of them. I also love the fresh, crunchy textures so this salad stuffed into a tortilla is a perfect combination of flavors and textures. I use a green spinach tortilla but if you cannot find them then go ahead and use a regular flour tortilla.
Ingredients:
  2 large boneless, skinless chicken breasts, cubed
  1 tsp. salt
  1 tsp. garlic-pepper seasoning
  ¼ cup flour
  2 tbl olive oil
  ½ cup buffalo sauce
  2½ cups Romaine lettuce, chopped
  1½ cup spinach, chopped
  ¼ cup carrot, chopped
  ¼ cup celery, chopped
  ¼ cup red onion, chopped
  ¼ cup tomato, chopped
  ¾ cup blue cheese dressing
  ¼ cup blue cheese crumbles
  fresh cracked black pepper
  4 large tortillas
Buffalo Chicken Salad Wrap

Instructions:
Season chicken with salt and garlic-pepper seasoning. Toss with flour to coat.

Heat oil in pan over medium heat. Add chicken and cook about 5 minutes until done. Add buffalo sauce and bring to a simmer. Allow to cool slightly.

Combine remaining ingredients (except tortillas) and season with cracked black pepper, to taste.

To assemble sandwiches, spoon ¼ salad into center of each tortilla. Top each salad with ¼ of chicken. Carefully roll tortilla closed by folding tortilla almost in half over salad. With fold side of tortilla closes to you, fold about 1½ inches of right side of tortilla over the end. Then roll remaining tortilla over folded tortilla to secure the wrap. Wrap the closed end of the tortilla with aluminum foil to make serving and eating much easier.

Makes: 4 wraps
