Cajun Chicken Panini |

After we bought a panini maker it was paninis for the next 6 months! This great sandwich has spicy chicken with creamy cheeses on ciabbata bread that is toasted to perfection. This really is a great sandwich! (Shown here with Spicy Coleslaw and Baked French Fries.) |

| Ingredients: |
2 large boneless, skinless chicken breasts, cubed
Cajun seasoning
garlic-pepper seasoning
2 tbl olive oil
¾ yellow onion, thinly sliced
1 jalapeño, thinly sliced
¼ red onion, thinly sliced
ciabatta bread
¼ cup sharp cheddar cheese
¼ cup extra sharp cheddar cheese
¼ cup swiss cheese
¼ cup mozzarella cheese
¼ cup Monterey Jack cheese
¼ cup provolone cheese |

Instructions: |

Season chicken with Cajun seasoning and garlic-pepper seasoning.
Heat oil in pan over medium heat. Add chicken and cook about 4 minutes. Add onions and jalapeño. Cook about 3 minutes.
Combine all cheeses.
To assemble sandwiches, cut ciabatta bread open. Cover one side of ciabatta bread with cheese mixture. Spoon chicken mixture over cheese and cover chicken with more cheese. Place other half of ciabatta bread on sandwich.
Carefully place each sandwich into a the pre-heated panini maker. Cook until golden brown. |
