Chicken Parmesan Sandwich
Raved by Joe as "The best Chicken Parmesan Sandwich I have ever tasted!" Keep in mind that Joe is very particular about what foods he will eat. The key is a very flavorful breading on the chicken with a crusty French bread.
Ingredients:
  4 boneless, skinless chicken breasts
  1 egg, beaten
  1 cup flour
  1 cup bread crumbs
  1 cup favorite tomato sauce (I use Ragu Tomato and Onion)
  4-6 oz mozzarella cheese
  French bread (I use Pepperidge Farm)
  garlic-pepper seasoning
  cayenne pepper
  Italian seasoning
  shredded parmesan cheese
  butter
  garlic
  ¼ cup olive oil with ¼ cup vegetable oil
Chicken Parmesan Sandwich

Instructions:
Cut chicken into strips (about 4-6 strips per breast). Season with salt and pepper.

In a bowl, combine flour with 1 tbl. garlic-pepper seasoning, 1 tsp. cayenne pepper and 1 tbl. Italian seasoning. In another bowl, combine bread crumbs with 1 tbl. Italian seasoning, 1 tbl. garlic-pepper seasoning and ½ cup parmesan cheese.

Heat oils in pan over medium heat.

Dredge each chicken strip in flour mixture, then egg, then bread crumbs. Carefully place in hot oil. Cook about 2-3 minutes per side, until golden brown. Remove from pan and place on paper towels to drain excess oil.

Meanwhile melt 2 tbl. butter with 1 tsp. minced garlic. Toast the split French bread and then brush with garlic butter.

To assemble sandwiches, place 4-6 chicken strips on the bottom part of the French bread. Spoon about ¼ cup tomato sauce over chicken strips. Top with sliced mozzarella cheese and shredded parmesan cheese.

Wrap each sandwich in foil. Bake in 350° oven for 10 minutes to melt cheeses. Cool for a couple minutes, unwrap and enjoy!
