Spicy!Baked Potato Soup
Why have just a potato when you can have a soup. This is a basic potato soup that comes to life with the toppings. Of course, add your favorite toppings to this baked potato. Enjoy!
Ingredients:
  1 large yellow onion, chopped
  4-6 large red potatoes, diced
  1-3 minced garlic cloves
  2 tbl butter
  3 cups chicken broth, or equivalent with chicken boullion
  dash celery seed
  2 cups milk
  1 tbl cornstarch
  3 tbl cold water
  salt and pepper
  shredded sharp cheddar cheese
  chopped red onion
  sour cream
  fresh bacon pieces
Baked Potato Soup

Instructions:
First, melt the butter in a large soup pot. Add the chopped yellow onion and cook until the onion is translucent. Add the garlic and celery seed while the onion is cooking. When the onion is done, add the diced potatoes and chicken broth. This needs to simmer about 20 minutes until the potatoes are tender. At this point, add the milk. Heat the soup, but do not allow to boil. Mix the cornstarch with water and slowly add to the soup. Allow this to simmer for about 10 minutes to allow the soup to thicken. Season with salt and pepper.

To serve the soup, ladle into bowls and garnish with your favorite baked potato toppings. We like sour cream, red onion, lots of cheese, and bacon bits. Enjoy!
