Applesauce Raisin Bread |
|
This recipe is very similar to The BEST Ever Banana Bread recipe. In fact, this recipe turned out so well that I am going to try the same thing to make many different types of fruit breads. Substitute your own mashed fruit and adjust the complimentary ingredients. |

| Ingredients: |
| For the bread: |
¾ cup butter
1 ½ cup sugar
1 ½ cup chunky applesauce, homemade or purchased
2 eggs
1 tsp. vanilla
1½ cups flour
1 cup oatmeal
1 tsp baking soda
1 tsp salt
8 oz. plain yogurt
½ cup raisins

| For the homemade applesauce: |
3 apples, peeled, cored and chopped
½ cup water
½ tsp. cinnamon
¼ cup sugar, depending on tartness of apples

Instructions: |

Begin by creaming the butter and sugar. Then add the applesauce, eggs, and vanilla.
In a separate bowl, combine the flour, baking soda, and salt.
Alternatively add the flour mixture and the yogurt to the applesauce mixture in small amounts until all ingredients are combined. Stir in the oatmeal and raisins.
Pour into a greased loaf pan or several small loaf pans (about 5) and bake at 350º for 90 minutes.
To make homemade applesauce: cook apples in water in a saucepan over medium heat until apples become tender. Add cinnamon and sugar. Using a hand held potato masher, mash apples to desired consistency. Allow applesauce to cook before adding to creamed butter and sugar mixture.
