The BEST Ever Banana Bread |

This recipe has been borrowed from my college roommate, Lisa Red. I have modified it slightly, but the same great taste exists. This bread tastes even better with cream cheese frosting added to the top! |

| Ingredients: |
| For the bread: |
¾ cup butter
1 ½ cup sugar
1 ½ cup mashed ripe bananas
2 eggs
1 tsp. vanilla
2 cups flour
1 tsp baking soda
1 tsp salt
8 oz. plain yogurt
½ cup nuts (optional)

| For the cream cheese frosting: |
¼ cup butter, softened
4 oz. cream cheese, softened
1 tsp vanilla
3 - 3 ½ cups powdered sugar, sifted

Instructions: |

Begin by creaming the butter and sugar. Then add the bananas, eggs, and vanilla.
In a separate bowl, combine the flour, baking soda, and salt.
Alternatively add the flour mixture and the yogurt to the banana mixture in small amounts until all ingredients are combined. (OPTIONAL) Stir in the nuts.
Pour into a greased loaf pan or several small loaf pans (about 5) and bake at 350º for 90 minutes.
Allow bread to cool before frosting.
To make the cream cheese frosting: beat together the cream cheese, butter, and vanilla until light and fluffy. Gradually add about 2 cups of the powdered sugar and beat well. Beat in remaining powdered sugar until frosting consistency desired is achieved.
