Sweet Cornbread Pudding |

This is very new to the collection! This is inspired by Chevy's Mexican Restaurant. A sweet, moist cornbread that is mashed into a pudding. Very YUMMY! |

| Ingredients: |
2 cups sweet corn kernels (fresh, frozen, or canned)
3 tbl butter
3 eggs
½ cup half & half
½ cup milk
¼ cup Cornmeal Mix ( this is a cornmeal and flour blend)
½ tsp salt
1 tbl sugar
2-3 tbl brown sugar

Instructions: |

In the container of a food processor, combine 1 cup corn, eggs, half & half, milk, cornmeal mix, salt, and sugar. Process for about 15 seconds. Add the remaining corn and process just a second to mix.
Use about 1 tbl of butter to grease an 11x7 baking dish. Pour the corn mixture into this dish. Thinly slice the remaining butter and lay the slices across the top of the corn mixture in the baking dish.
Set this baking dish inside a larger baking dish. Fill the larger baking dish half way with hot water. Be careful. Bake at 350º for 1 hour. Remove from the oven and allow to cool for approx. 5 minutes.
Using a spoon, scoop the cornbread from the baking dish into a serving bowl. Add the brown sugar. Combine the brown sugar and cornbread into coarse crumble texture. Serve warm.
This makes approximately 4-6 side dish servings.
