Tropical Dream Bars |
|
This gooey, sweet treat will make you long for the islands. Sweet pineapple, banana and coconut fill this bar with goodness. Sprinkle the top with powdered sugar to dress this simple treat up a bit. |

| Ingredients: |
| For the cake: |
1 (18 1/4-ounce) package yellow cake mix
1 egg
8 tablespoons butter, melted

| For the filling: |
11 ounces (8 ounce + 3 ounce) package cream cheese, softened
1 very ripe banana
4 eggs
½ tsp. vanilla
½ cup coconut flakes
1 small can crushed pineapple, drained
1 (16-ounce) box powdered sugar
dash of cinnamon
1 small can mandarin oranges, drained
¼ cup macademia nuts, finely chopped

Instructions: |

|
Preheat the oven to 350º.
To make the cake: Combine all of the ingredients for the cake and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan. Prepare filling.
To make the filling: In a large bowl, beat the cream cheese and banana until smooth. Add the eggs, vanilla, coconut and pineapple, and beat together. Next, add the powdered sugar and cinnamon and mix well. Place mandarin orange segments over cake mixture. Spread cream cheese mixture over cake batter and bake for 30 minutes. Sprinkle macademia nuts over cake and bake for an additional 20 minutes. Make sure not to overbake as the center should be a little gooey.
Allow to cool and sift powdered sugar over the top.
