Sweet and Crunchy Chicken Salad |

Go crazy with this! I have listed the basics, but if there is something else you like--go ahead and add it! This is easily made for one person, or many more. The listing is for one person.
This also makes an easy vegetarian salad with the elimination of the ground beef. |

| Lettuce mix: |
Chopped leaf lettuce
Chopped iceberg lettuce
Chopped baby spinach leaves |
| For the dressing: |

A good honey mustard dressing |
| For the fried chicken: |
2 boneless, skinless chicken breasts, cut into 1 inch pieces
seasonings: garlic salt, black pepper, onion powder, cayenne pepper
1 cup flour
2 eggs, beaten
oil for frying |
| Other salad toppings: |
I small can mandarin orange slices
¼ cup honey-roasted soynuts, macademia nuts or peanuts
thinly sliced red onion, to taste
sliced strawberries
pineapple chunks
diced apples
shredded coconut |

Instructions: |

To make the fried chicken, season the chicken pieces with about a teaspoon of each seasoning. You may want less cayenne pepper -- just a dash. Let sit for about 10 minutes. Toss chicken pieces with ¼ cup flour to coat. Working in small batches, shake excess flour from chicken and add chicken pieces to eggs. Drain excess egg and add chicken pieces to ¾ cup seasoned flour (use same seasoning method described above.) Shake excess flour from chicken pieces and place chicken in hot frying oil. Cook until brown. Repeat with another small batch of chicken pieces.
To assemble salad, toss about three cups of lettuce/spinach blend with 2-3 tablespoons honey mustard dressing. Arrange lettuce on plate. Top with remaining ingredients. This assembly method is per serving, but you could also create one big, help yourself salad to serve a large number of people. Enjoy! |
