Spicy!Taco Salad
Go crazy with this! I have listed the basics, but if there is something else you like--go ahead and add it! This is easily made for one person, or many more. The listing is for one person.

This also makes an easy vegetarian salad with the elimination of the ground beef.
Ingredients:
For the dressing:
  ¼ cup sour cream
  2 tbl salsa verde
  1 tbl powdered ranch dressing
  milk to desired dressing consistency (about 2 tbl)
For the salad:
  ¼ lb. ground beef
  ¼ cup black beans, canned
  1 small yellow onion, chopped
  black pepper
  cayenne pepper
  garlic salt
  hot sauce (I love the green tabasco)
  1-2 cups chopped lettuce (iceberg, romaine, some spinach, whatever you like!)
  ½ tomato, diced
  ½ cup shredded cheese (cheddar, pepper jack, mexican blend--whatever you like!)
  1 cup taco seasoned tortilla chips, crushed to bit sized pieces
Taco Salad

Instructions:
Brown the ground beef. Season with garlic salt, pepper(s), and hot sauce to taste. Stir the onion into the ground beef. Add the black beans with their juice and cook slowly.

Combine all ingredients for the dressing. If you use prepared ranch dressing in place of the powdered, adjust the amount of milk you use. The milk is to thin the dressing. I usually prefer this dressing to be quite fluid and thin. Allow this it sit while all the flavors combine.

In the meantime, put the crushed tortilla chips on a plate. Evenly spread the chopped lettuce over the chips. Spoon the dressing over the lettuce in small dollops. Sprinkle about half the cheese over the lettuce and dressing. Top with the prepared ground beef. Next, add the tomatoes and the remaining cheese.
